Here is another fun appetizer recipe from our own Chef Jodie....

Spanakopita

3/4 cup butter
1/2 cup finely chopped onions
2 lbs. fresh spinach, cooked and drained
1/2 lb. crumbled Feta Cheese
2 -3 eggs
1/4 cup chopped parsley
2 tsp. chopped fresh dill
1 tsp. salt
fresh ground pepper
1 lb. Phyllo dough

Sauté onions in butter until golden. Add cooked spinach and stir. Remove from heat. In a separate bowl, combine the Feta, eggs, parsley, dill, salt and pepper and mix well. Add this mixture to the spinach and onion mixture and mix well. Brush a 13" x 9" baking pan lightly with melted butter. Lay 8 pastry sheets in the bottom brushing the top of each with butter. Spread the mixture evenly over the Phyllo. Cover with 8 more sheets, again brushing with butter. Pour any remaining butter over the top. Bake at 350°F for 35 minutes or until the top is golden brown. Serve warm.
