1 large flank steak - 1 1/2 to 2 lb. - buy a good one
12 oz of flat beer - flatten the beer by pouring it in the bowl the night before
A few good shakes of Tabasco or your favorite hot sauce
tablespoons of soy sauce
2 tablespoons of honey or sugar
4 tablespoons of orange marmalade
2 garlic cloves - minced
1 tablespoon of dry mustard
1 teaspoon of ground ginger
A couple shakes of salt
Simply combine all ingredients, mix well and pour over the flank steak in a shallow dish. Cover with plastic wrap or foil and refrigerate for at least 6 hours. Sear your steak on high and finish on medium. We like ours medium rare. Carve against the grain, at a slant and serve with the biggest, reddest Zin or Cab you can find!
P.S. This marinade also works great on pork tenderloin!
