Here is a long term hold... if you try it now decant it for at least three hours!

CYT Don Melchor Cabernet Sauvignon 2000 Maipo Valley, Chile $42
What the Wine Critics Thought: Wine Spectator 94 Points - Top 100 Wines of 2004
Terrific personality here, with prune, cocoa, loam, mineral, dark currant, blackberry, tar and sanguine flavors. Well-structured, but fine balance and harmony already, with a very long finish. Winemaker Enrique Tirado has steered this wine to modern day fruit (no more green notes) without losing an ounce of its terroir. Best from 2005 through 2010.

What we Thought: In about five years this is going to be one incredible bottle of wine. At last week's wine tasting we opened it at 2 pm and decanted it. By about seven o'clock it was drinking very well! I won't mention the fur that grew on my teeth when I tasted it just after we opened it. This review reflects it's 7 pm personality. Notes of blackberry, cassis and tar frame the nose followed by a rich, black currant and blackberry fruit and almost meaty flavors on the palate all supported by some formidable, dusty tannins that underline the promise of long life and nothing but improvement in the cellar as they mellow over time.
