Prosecco Gelées

Our gourmet food manager, Laurel, made this for a party and brought some in for us to try... really easy, really elegant and really good!

Prosecco Gelees

Serves 8

3 1/2 teaspoons unflavored gelatin
2 2/3 cups Prosecco
2/3 cup sugar
4 teaspoons fresh lemon juice
2 cups sliced fresh strawberries
1 cup fresh blueberries
2/3 cup fresh raspberries
2/3 cup fresh blackberries

Sprinkle gelatin over 2/3 cup of Prosecco in a small saucepan and let stand 5 minutes. Place saucepan over low heat , simmer 5 minutes or until gelatin dissolves, stirring constantly.

Combine sugar and 2/3 cup Prosecco in a medium saucepan over medium heat, cook 5 minutes or until sugar dissolves, stirring frequently. Remove from heat, stir in the remaining Prosecco. Add gelatin mixture and lemon juice and stir well.

Divide mixture among 8 Champagne flutes and add about 1/2 cup of mixed fruit to each glass, cover and chill at least 6 hours.
