Bacon, Basil, Mozzarella & Tomato Sandwiches

A few years ago, reader Janice McCord sent us a recipe for a fresh summer appetizer that was a little like a Caprese sandwich. She made little sandwiches of rustic bread and added slices of fresh tomato, slices of fresh mozzarella, fresh basil, and a sprinkle of fresh oregano, brushed them with olive oil and toasted them in an iron skillet. It sounded so good that we decided to try it ourselves, but as we were working on it, we decided to add crisp bacon and call it dinner. Either way, it's great. Here is our BBMT.

Serves 2


Sliced fresh tomatoes
Fresh basil leaves
Sliced fresh mozzarella
Fresh oregano
4 to 6 slices of crisp bacon
Slices of a rustic bread; we used an Italian loaf we found at the Farmers' Market.


Layer bread with bacon slices, then add the slices of tomato, cover with basil and top with sliced mozzarella. Brush with olive oil and toast like a grilled cheese or use a panini maker like we did.
