Baked Cod with Crispy Herbed Shrimp Topping

This may not be the prettiest dish we have ever made, and we could have done better with the "golden crispy" part, but it is so delicious that you will look past it....

Serves 4

Ingredients:

4 cod loins
1/2 pound shrimp (about 14), cooked, shelled and chopped
1/4 cup finely minced onion
1 garlic clove, minced
1/4 cup minced flat-leafed parsley
1 tablespoon capers, finely chopped
1/4 teaspoon dried basil
1/4 teaspoon dried tarragon
1 cup panko
1/4 cup mayonnaise
1/3 cup freshly grated Parmesan (worth it over the pre-grated variety)

Marinade:
1/4 cup fresh squeezed lemon juice
1/4 cup dry white wine
1 garlic clove, minced
1/2 cup olive oil

Preparation:

Whisk the marinade ingredients together with some salt and pepper, reserve 1/4 cup, and then pour over cod loins in a baking dish. Refrigerate for about 3 to 4 hours, turning them every hour. Stir the rest of the ingredients together, adding the reserved 1/4 cup of marinade, and some more salt and pepper until the topping is well combined and crumbly.

Bake the loins in the marinade in the middle of a preheated 400 degrees oven for 10 minutes. Then spread the topping over the cod and bake for 5 more minutes. Adjust to the broil setting, and broil about 4-inches from heat for another 5 minutes, or until topping is golden and crispy.
