Caprese Salad

his week's recipe comes to us from Wine Gal Carlene Clark, and it is simplicity itself. With all the beautiful tomatoes at the Farmers Markets this may be the perfect time for this summer salad!

Serves 6


2 large, ripe tomatoes, sliced 1/4-inch thick
8 ounces fresh mozzarella cheese, sliced 1/4-inch thick
1 cup fresh basil leaves
Coarsely ground salt to taste
Freshly ground pepper to taste
1/4 cup extra virgin olive oil
1/4 cup aged balsamic vinegar


Arrange tomato, cheese and basil on a serving plate or platter alternating fresh ingredients to form an overlapping effect.
Drizzle with olive oil and balsamic vinegar then sprinkle with salt and pepper. May be served immediately or made ahead of time.
