Chicken with Balsamic Vinegar and Basil

Laurel, our gourmet food buyer, was so inspired by our new line of authentic Italian olive oils and balsamic vinegars that she came up with this recipe....

Serves 2

Ingredients:

2 boneless skinless chicken breasts
2 teaspoons olive oil
2 tablespoons balsamic vinegar — Laurel used the La Piana Strawberry Balsamic Vinegar
1 tablespoon honey
2 tablespoons chopped fresh basil
salt and pepper

Preparation:

Season chicken breasts with salt and pepper. Sauté in olive oil for 5 minutes on one side then turn and continue for about 6 more minutes. Add additional ingredients and cook for an additional minute. Drizzle the balsamic mixture over the pasta of your choice over and serve with a nice Chianti, like the Monsanto.

This would also work well with pork, salmon or scallops.
