Super Bowl Chili

Here are some of our own Chef Jodie's Superbowl specialties.

Serves a bunch - actually 15 to 20

3 to 4 pounds county style pork ribs
1 1/2 pounds ground round steak
3 medium onions, chopped
2 10 1/2-ounce cans beef broth
1 can beer
1 cup red wine
2 10 1/2-ounce cans whole tomatoes
2 cans tomato paste
7-ounce can mild green chilies
1/4- to 1/3-cup chili powder
1 teaspoon each cinnamon, cumin, and leaf oregano
2 cloves garlic
3 tablespoons sugar
1 tablespoon unsweetened cocoa
1/2 teaspoon cayenne pepper
2 10 1/2-ounce cans red kidney beans
2 10 1/2-ounce cans pinto beans

Brown ribs in a large kettle; remove and set aside. In same pot, brown ground steak and onions. Add ribs and broth, beer, wine. Mix well. Add remaining ingredients and simmer all afternoon. The longer it is allowed to cook, the better it is.

At serving time, remove meat from ribs; discard bones. Serve with a dollop of sour cream and grated cheddar cheese. (Also freezes well).
