Cuban Sandwiches

There are about a million recipes for Cuban sandwiches out on the internet... we looked at three or four and came up with this when we had some left over pork roast on Sunday.

Ingredients:

1 fresh baked French Batard, like the ones we sell, or you could use some other inferior French bread from the grocery store
Sliced ham - we used Boar's Head
Roast Pork - thinly sliced (we used leftovers from the night before...here is a link to that recipe "Pork Pot Roast"
Swiss cheese slices
Dill pickle slices
Yellow mustard
Panini maker or griddle

Preparation:

This isn't rocket science, but it makes a great sandwich. Cut the batard into 6" sections discarding the ends (or for nibbling during preparation). Place a layer of pork, ham, pickles, swiss cheese on the bottom half of the batard, and then spread yellow mustard on the top piece of bread. Place in a heated panini maker for about 4 to 6 minutes, until the cheese is nicely melted. You could also use a griddle, much like you make a grilled cheese sandwich, but you will need something with some weight to put on top since this is a "pressed" sandwich. Also flip it over once to lightly brown both sides.
