Dinner in a Foil Packet

A co-worker of Linda’s passed this simple, healthy, but tasty recipe along to her. Guess everyone must be trying to “be good” and drop a few pounds for the New Year. And the varieties on it are pretty limitless. This is way too easy!

This is a mix and match... we used tilapia, asparagus and snow peas and liked the results.

Serves 4

Ingredients:

4 pieces of Tilapia, or any other mild white fish, boneless chicken breast or a pork tenderloin cut into 1/2-inch medallions

Lemon Dill Flavoring:

1 teaspoon lemon zest
1/4 cup olive oil
1 garlic clove, minced
4 green onions, thinly sliced including some green
1/4 cup chopped fresh dill
salt and pepper to taste

Vegetables:

your pick of two of the following vegetables:
asparagus, cut into 1-inch lengths
bell peppers, cut into 1/4-inch thick strips
bok choy, thinly sliced
sliced mushrooms
sugar snap peas
zucchini or yellow squash, in 1/2-inch thick slices

Preparation:

Heat oven to 500 degrees. Mix half of flavoring with vegetables in a bowl. Using heavy duty foil in 12-inch x 18-inch sized sheets, place vegetables and then meat onto the foil, drizzling the remaining flavoring over the meat. Bring long sides of foil together and fold to crimp. Fold ends, and place on baking sheet. Bake for about 15 minutes.
