French Potato & Garlic Omelet

This recipe came from reader Pat Nelson in response to last week's piece about pairing wine with an omelet. We tried it, and it is just as good as it sounds! It went well with coffee and OJ, but I'm thinking the Clancy's would work with it, too....

Reading your omelet recipe reminded me of one of my families favorite egg recipe from my "Frugal Gourmet" cookbook. I thought you might like to try it — if you do, I hope you enjoy it as much as we do!

This recipe is for one omelet — just increase measurements by the number of servings you are making.

1 slice bacon, diced
2 green onions, chopped
1/2 clove garlic, crushed (since my family LOVES garlic I usually
use 1 to 2 cloves)
1/2 cup cold cooked unpeeled new potatoes – I use about 1 1/4 per omelet
Fresh grated Parmesan cheese for garnish
Salt & Pepper to taste

Saute the bacon in a small frying pan — not your omelet pan! When the bacon is crisp, add the green onions, garlic and potatoes. Cook until hot, and use for filling in omelet. Add salt and pepper last. Garnish with cheese on top.

This quantity of filling works well with a three-egg omelet.
