Chopped Greek Salad with Grilled Chicken

We tend to eat more salads in the warm months, and embellishing with some grilled chicken strips or even grilled shrimp turns it into a full meal. We’ve prepared this salad with both, and also without anything extra as a side, and it is always a hit.

Serves 2

Ingredients:

2 grilled chicken breasts, cut into 1/2-inch wide strips – allow to cool some before cutting and serving.
Head of romaine lettuce, sliced crosswise in slices about 1/2-inch wide– depending on the size of the head, you’ll need about 6 to 7 cups.
1 15 1/2-ounce can of drained garbanzo beans
1 red bell pepper, diced
2/3 cup of very thinly sliced red onion (or more or less, depending on your taste for red onions)
1/2 cup crumbled feta cheese
2/3 cup sliced, pitted Kalamata olives
6 tablespoons olive oil
3 tablespoons white wine vinegar
1 tablespoon Balsamic vinegar
1 teaspoon dried oregano
1 garlic clove, minced
salt & pepper

Preparation:

Whisk the oil, vinegars, oregano and garlic together. Season with salt and pepper and set aside to chill. Combine all other ingredients except chicken in large bowl, pour dressing over lettuce, and top with the grilled chicken strips, or substitute grilled shrimp. If just serving as a side salad, a nice touch is to add about 2 ounces of thinly sliced Italian Genoa salami, cut into strips.
