Greg's Spicy Shrimp Quesadillas

This is a great appetizer to cook and serve off the kitchen island with a nice glass of Chardonnay at an informal dinner party.

2 cups well drained-chopped-boiled shrimp
1/3 cup chopped cilantro
1 tablespoon Thai Chili Paste ( this makes a spicy mix use less if desired)
1 14.5-ounce can well drained-chopped stewed tomatoes.
1 tablespoon finely chopped garlic
olive oil
3/4 cup small pieces of Port Salut Cheese
12 flour tortillas - fajita sized (small)

Preheat griddle to 350 degrees. Mix the first five ingredients in a bowl. Coat griddle with a small amount of olive oil.

Place two tortillas on the griddle. Working quickly, spoon a small amount of the mixture and cheese on each tortilla. Top each with another tortilla. Cook until the bottom is golden brown then turn. Continue cooking until the other side is golden brown and the cheese has melted.

Remove to cutting board and cut into quarters with a pizza cutter.
