Hog Roast Baked Beans

Just in time for the 4th of July... Here is the famous (in Elkhart, IN) Church hog roast baked bean recipe from Linda's sister Kathleen.

Serves about 8-10

48-ounce can of baked beans (can be Bush's, Campbells or whatever. Stay away from generic.)
1/2 to 3/4 pound of bacon (cut in chunks, NOT pre-cooked)
1 large onion chopped in chunks
1 green pepper chopped in chunks
1 tablespoon Worcestershire Sauce
3/4 cup ketchup
3/4 cup brown sugar

Combine all in casserole dish. Bake covered at 325 degrees for 2-1/2 hours, stirring occasionally. Raise oven temperature to 350 degrees, uncover and bake 30 minutes or until thickened. The trick is to cook them long enough so it thickens up to a wonderfully sweet, bacony dish. Of course all ingredients can be adjusted to suit individual tastes.
