Blue Marlin Steaks with Garlic, Tomatoes, Capers and Basil

Here is yet another "Mediterranean Fish" recipe — it will work with any firm fish like tuna, swordfish or....

Serves 2

1 tablespoon olive oil
1/2 cup chopped onion
2 garlic cloves - minced
1 14-ounce can of diced tomatoes
3 tablespoons chopped fresh basil
1 tablespoon capers
2 tablespoons Italian parsley - chopped
1/2 cup white wine
2 4-5 ounce Marlin steaks

Heat the olive oil in sauté pan over medium heat and sauté the onions and garlic until the onions soften. Stir in the tomatoes, basil, capers, parsley and wine and simmer for about 5 minutes. Place the fish in a baking dish sprayed with Pam or olive oil and pour the tomato mixture over the fish and bake in a 400 degree oven for 12 - 18 minutes depending on the thickness of your steaks. Ours were an inch and a half thick and took the full 18 minutes. We served it with rice and some fresh broccoli and a bottle of Sangiovese.
