Mediterranean Cod

This preparation will also work well with almost any firm white fish...

Serves 6

Ingredients:

1 tablespoon olive oil
1 medium yellow onion - chopped
1 medium red bell pepper - chopped
1 14-ounce can or diced tomatoes
1 can artichoke hearts in water - chopped
12 Kalamata olives pitted and halved
1 garlic clove chopped
1 tablespoon Herbs de Provence
1 8-ounce cod fillet
salt and pepper to taste
4 servings of angel hair pasta

Preparation:

Heat the olive oil in a heavy skillet over medium heat. Add the garlic, onion and red bell and sauté until the onion is tender but not browned. Add the artichokes, tomatoes, olives and herbs cooking until everything warms through then salt and pepper to taste. Add the cod, cover with the mixture and simmer until cooked through (this happens very quickly). Serve it immediately over the pasta.
