Red Skin Potato Salad

Linda actually made this one up by leafing through recipes on the internet and combining all the ingredients she liked..... perfect for a summer Sunday afternoon lunch!

Serves Many


2 lbs of redskin potatoes
4 slices of bacon - cooked and chopped
2 hard-boiled eggs - chopped
5 green onions chopped finely - greens reserved for garnish
1/4 cup sweet pickle relish


1 Tbs plus 1 tsp Dijon mustard
1/3 cup mayonnaise
1/3 cup sour cream
1 tsp Kosher salt
1/8th tsp white pepper


Cut potatoes into 1/2" to 3/4" pieces and cook for about 8 minutes or until fork-tender. Set aside to cool. Mix mayonnaise, sour cream, Dijon mustard, salt and pepper in small bowl. Add other ingredients to the potatoes, then the dressing, blend and chill before serving. Garnish with the sliced greens right before serving.
