Sautéed Zucchini

Serves 4


3 medium Zucchini
3/4 cup coarse dice sweet onion
1 clove garlic minced
2 tablespoons extra virgin olive oil
2 tablespoons butter
salt and ground black pepper
chopped parsley


1. Peel and coarse grate zucchini.
2. Sauté onion in a little olive oil until just tender. Add garlic halfway through.
3. Turn up heat and add 2 tablespoons butter and zucchini. Quick sauté till just cooked. Do not over cook. Add salt and pepper to taste. Add a little Bouquet Garni or other seasoning if you wish. Garnish with chopped parsley and serve.
