Seared Rare Tuna

We serve this cold so it's practically sashimi, it make a great appetizer or dinner with a nice salad.


1 pound tuna
sesame oil
toasted sesame seeds
peanut oil


Rub the tuna filets with the sesame oil, then sprinkle with sesame seeds to coat the top and bottom. Heat your pan over high heat, add some peanut oil to coat and sear the tuna for 30 to 45 seconds on each side depending on the thickness. I like about a 1/4-inch of white on each side. Be advised, a splatter screen comes in handy here.

I cover this and chill it over night. To serve, slice it into thin strips and serve with traditional sushi accompaniments like pickled ginger, wasabi and soy sauce.
