Spicy Shrimp and Peaches

This is a quick and easy summer meal that uses some of those sweet, fresh peaches that are in big supply at the Farmers’ Market.

Serves 2


10 large raw prawns
1-1/2 medium peaches, cut into chunks
green onions, with the dark part cut into 2-inch pieces
Spice Rub (recipe below)

Spice Rub:

1 tablespoon packed brown sugar
1 teaspoon ancho chile powder
1 teaspoon paprika
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
Salt and pepper


Mix the spice rub together, and put the rub, the shrimp and peach chunks in a large plastic bag and shake to thoroughly cover shrimp and peaches. Thread shrimp, peaches and green onions alternately onto skewers. Grill 3 to 4 minutes or until just browned and shrimp are opaque, turning once.
