Sweet Potato Soufflé

Here is Thanksgiving recipe from Linda, Mrs. Wine Guy... While it is not technically a true soufflé, trust me... it's good! Three years ago reader Patti Peck sent us her family sweet potato recipe and with only two tiny differences they were the same recipe. I'm guessing Linda's mom and Patti's mom had the same issue of Good Housekeeping 40 years ago...

Filling:

3 cups cooked, mashed sweet potatoes (3 - 4 large sweet potatoes scrubbed and peeled)
1/2 cup sugar
1/2 cup milk
1/4 cup melted butter
2 eggs
1 teaspoon vanilla
salt to taste

Place all ingredients together in a mixing bowl and gently whip together. Transfer to a casserole dish.

Topping:

1/2 cup brown sugar
1/4 cup butter
1/3 cup flour
1 cup chopped pecans

Combine topping ingredients and sprinkle over the top of the casserole. Place in a 350 degree oven and bake for 35 minutes.
