Tangerine-Basil Glazed Chicken

Linda and I are back to “eating lean” to drop some pounds (who isn’t?)…and there are only so many ways you can fix chicken breasts without getting bored. So we were pleased when she found this recipe hidden in her file. It is easy, delicious and lean.


4 boneless, skinless chicken breasts


1 cup tangerine juice (buy fresh and squeeze them…Clementines are really delicious)
2 teaspoons tangerine zest
1/4 cup sugar
1 tablespoon dried basil
1/4 cup rice vinegar
1/2 teaspoon crushed red pepper flakes
2 tablespoons low sodium soy sauce
(we also use a touch of Sriracha)

Place all of the glaze ingredients in a small saucepan and cook on medium heat, until volume is reduced by half. Cut the breast lengthwise into several strips (an important step, since it provides more glazing surface). Place on roasting pan, brush with glaze and bake in a 350 degree oven until done, about 15 to 18 minutes. Continue to brush with glaze while baking.
