Thai Pizza

Fourteen years ago, on the night we met, Linda and I shared a Thai pizza at Some Guy's. We have traditionally gone back to repeat the experience on each "meeting" anniversary, but last week we decided to try making our own.

The big impediment to making pizza at home is that it's just too time consuming to make a crust. A few months ago, we discovered that Papa Murphy's, the carry out "you bake it" pizza stores, have great crusts. You can buy their plain cheese pizza and dress it yourself, or, like we did this time, ask for just the crust for their Thin Delight pizza. They sold it to us for $2.99, a bargain compared to waiting for dough to rise.

The Sauce

4 tablespoons peanut butter
3 tablespoons rice vinegar
2 tablespoons white wine
1 tablespoon lime juice
1 teaspoon chili oil (more if you like it real hot)
tablespoon ginger - minced
2 teaspoon honey
1/2 teaspoon sesame oil
tablespoon cilantro leaves

Combine all ingredients in a blender and process until smooth. Makes about 2/3 of a cup.

The Pizza

1 14-inch thin pizza crust (we bought the Papa Murphy's Thin Delight, plain)
2 chicken breasts cut into 1/4-inch strips
1 bunch of green onions - chopped
2 tablespoons toasted sesame seeds
1/4 cup chopped peanuts
1/4 cup cilantro leaves - chopped
1/2 cup shredded carrots (use a Mouli, or do what we did - buy a bag pre-shredded)
1/2 cup bean sprouts (we used canned, not fresh)
3/4 cup gouda cheese grated
3/4 cup mozzarella cheese grated
red pepper flakes
1 tablespoon chili oil
1 tablespoon peanut oil

Sprinkle chicken with salt and red pepper flakes and sauté in the peanut oil until done. Chop the chicken into bite-sized pieces and combine with half of the peanut sauce, coating it thoroughly. Lightly brush the crust with the chili oil and spread it with the remaining sauce. Distribute both cheeses over the sauce. Then, sprinkle the pizza evenly with the chicken and the sauce it is in, followed by the carrots, green onions, bean sprouts, cilantro, peanuts and sesame seeds.

Bake in a 450 degree oven for about 12 to15 minutes. We used the Papa Murphy tray, but slid it off onto our pizza stone for the last 3 minutes.

I know this sounds like a lot of work, but it only took two of us about 45 minutes from start to table, and trust me, it's worth it!
