Tomato and Goat Cheese Salad with Pesto Vinaigrette

Chef Jodi's Fresh Tomato and Goat Cheese Salad with Pesto Vinaigrette

Serves 4

For the Salad:

2 large red tomatoes
1 large yellow tomato
4 ounces of goat cheese
salt to taste

Slice tomatoes in circles and layer alternately with thinly sliced goat cheese and drizzle with vinaigrette.

For the Vinaigrette:

2 tablespoons pine nuts
2 tablespoons fresh chopped basil
1 tablespoon minced fresh garlic
1/4 cup balsamic vinegar
1/2 cup olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup olive oil

In a food processor or blender combine all ingredients except the olive oil, blend well and scrape down sides. Add oil very slowly on low, blending well.
