Turkey Tetrazzini

This easy casserole is a great way to use leftover Thanksgiving turkey. And since we cooked a meal for eight for the two of us, we had plenty. This is an extra savory, creamy pasta dish that's crave-able all year long. Baked noodles are studded with turkey, mushrooms, and cheese for an easy weeknight meal.

Serves 8

Ingredients:

Cooking spray
1 lb egg noodles
6 Tbs butter, divided
2 cloves garlic, minced
1 lb sliced white mushrooms
1/2  cup white wine
1/4 cup all-purpose flour
2 1/2 cup chicken broth
1 cup heavy cream
Kosher salt
Freshly ground black pepper as well as some white pepper
2 lb. leftover roast turkey, chopped (about 5 cups)
1 cup shredded swiss cheese
1 cup thawed frozen peas
4 ounces cream cheese, cut up into pieces
1 tsp dried oregano
1 cup panko bread crumbs
1/2 cup freshly grated Parmesan
2 tbsp extra-virgin olive oil

Preparation:

Preheat oven to 350° and grease a 9”-x-13” baking dish with cooking spray. In a large pot of boiling salted water, cook noodles according to package directions and drain. In a large skillet over medium heat, melt 2 tablespoons butter. Add garlic and cook until fragrant, 1 minute. Add mushrooms and wine and cook until most of wine is absorbed and mushrooms are soft, 5 minutes. Add remaining 4 tablespoons butter to skillet, then whisk in flour and cook until golden, 3 minutes.

In the meantime, warm both the broth and cream in a microwave. And then slowly add broth, cream and cream cheese and whisk until no lumps remain and cream cheese is melted. Simmer until thickened, 5 minutes. Season with salt, black pepper, and a few shakes of white pepper. Add turkey, cheese, peas, and oregano and toss until combined. Add cooked pasta and toss to coat. Season with salt and pepper, then transfer mixture into prepared dish.

In a medium bowl, toss to combine panko, Parmesan, and oil. Top baking dish evenly with panko mixture. Bake until top is golden and cheese is melty, about 25 minutes. Let cool 10 minutes before serving. And yes, this cries for a good Oregon Pinot Noir....
